This recipe is actually vegan. I don’t really care that much, it just makes a really good bread.
Ingredients
2 cups flour
1 1/2 tsp baking soda
1/2 tsp salt
1 cup white sugar
1/3 cup vegetable oil
4 ripe bananas, mashed
1/4 cup water
1 tsp vanilla extract
1 cup chocolate chips
Preheat the oven to 350°F. Grease a bread pan and set it aside.
In a medium bowl, combine the flour, salt, and baking soda.
In a large bowl, slice the bananas then mash with a pastry knife, a potato masher, or an electric mixer. Add the sugar and the oil, mix until combined. Stir in the water and vanilla. Mix thoroughly.
Add the flour mixture in thirds. When this is completely mixed, add the chocolate chips.
Fill the bread pan and bake for 30-40 minutes, until a toothpick comes out clean. Sometimes the bread will brown before the inside is thoroughly cooked, so to avoid burning, you may want to cover the bread once the top is the golden brown color you desire. Thoroughly cool before removing from the tin.
