cranberry almond salad

I nearly named this post “Lazy Salad” because it’s one of those things I make when I’m lazy. It’s fairly easy to make this even when you don’t have many groceries, because most the ingredients are household staples (at least, for me they are).

Ingredients

mixed greens
handful of raw almonds
handful of dried cranberries (either unsweetened, or sweetened with natural apple juice)
goat cheese (I like the Medallions from Trader Joes)
handful of cherry tomatoes, sliced in half
sprinkle of herbs de provence
balsamic vinegar
olive oil.

Easy peasy. Throw your greens in a bowl, slice your tomatoes in half, grab a handful of almonds, and a handful of dried cranberries. Pour in balsamic vinegar and olive oil, and sprinkle herbs de provence. Toss the salad then add the crumbled goat cheese. If it takes you more than five minutes to make this salad, you did something wrong.
